Grilled Bacon-Wrapped Jalapeno Poppers

Ingredients:

1 pack of bacon

6 large Jalapenos

1 block of cream cheese, softened

1 cup of shredded cheddar cheese

Toothpicks

First, leave the cream cheese in a mixing bowl to soften at room temperature for approximately half an hour. Also, take some tooth picks and soak them in a little water. While the cream cheese softens, cut the top end off of the jalapenos and cut them length-wise into two equal halves. Then, using a spoon, scoop out the seeds and discard them. Safety tip: the oil in the skin of the jalapenos can burn pretty bad, so try not to get too much of it on your skin and definitely wash your hands thoroughly before touching your eyes or using the bathroom. After the jalapenos are cut, mix the cheddar cheese with the softened cream cheese. Spread the cream cheese mixture in to the jalapeno halves equally. Now, wrap each jalapeno in one slice of bacon. Try to completely cover the cream cheese mixture so that it doesn’t ooze out while it’s cooking. Skewer the toothpicks through the bacon and jalapeno to hold them together after you’ve wrapped them. Once all of the jalapenos are wrapped, find a cooler spot on your grill and put down some aluminum foil. Place the jalapeno poppers on the aluminum foil and let them cook until the bacon crisps. Serve and enjoy. These are good eaten alone or with a little ranch dressing.
