If you’re facing an unexpected crisis due to recent disasters or the pandemic, or you just want to make sure you are on the right track, speaking with a professional, no-cost counselor can move you toward greater financial stability. We are now offering free phone consultations to answer questions without having to schedule a full session. Phone consultations are available Monday through Thursday from 9 a.m. to 5 p.m. Financial counselors are also available for longer virtual or phone sessions to help you work through personal financial situations. Work with a counselor is client-led, so whatever circumstance or goals you come in with, a counselor can help you design a plan of action and provide encouragement along the way. Sometimes you just need someone to assure you there is a path forward.

Tortellini Spinach Soup

Ingredients:

1 package of fresh or frozen tortellini

4 cups of chicken or vegetable broth

½ tablespoon of olive oil

1 tablespoon of minced garlic

2 cups of fresh spinach

Salt and pepper to taste

1 cup of cooked and shredded chicken (optional)

Set a large pot on medium heat and add the olive oil. Once the pot has heated up, add the garlic and sauté it for about a minute, but do not brown it. Then, add the chicken broth and raise the heat to medium high and bring it to a boil. Once it is boiling gently, add the tortellini. Bring the soup back to a boil, and reduce the heat to medium. Boil the tortellini for about 8 minutes, or whenever most of it starts to float on the surface of the soup. Then add the spinach in handfuls and let it wilt. Add salt and pepper to the soup to taste.

This soup is great without meat, but you can add chicken for a heartier meal after the tortellini is fully cooked. You can also replace the chicken broth with vegetable broth for a completely vegetarian soup. Enjoy!
